At the moment, we concentrate in producing high quality organic, extra-virgin olive-oil. We attend the whole process personally!
To meet our demands it is necessary to harvest the olives as smooth as possible. Then we sort out most of the leaves and small twigs. The same or next day our olives are brought to the mill. There the rest of the leaves is sucked away (similar to a vacuum cleaner) the olives are rinsed by water and sorted on a vibrating table. We take any remainings manually away, so that just olives reach the next step. This is chopping up the olives and filling them into a container where they are turned over and over at low temperature. This way the small drops of oil accumulate so they can be separated from the “smoothie”and the water more easily. This process takes about 90 minutes before the fresh, delicous, green olive-oil is filled into stainless steal containers. We do not filter the oil, as many others do, we prefer the natural process of sedimentation over 3 months. This gives us the opportunity to enjoy “το πρώτο” which means the very first olive-oil. It contains a lot of bioflavonoids, chlorophyll and vitamins.
This sediment is used to make our precious, handcrafted olive-oil soap. Only a few handpicked, natural ingredients are added for moisturizing and fragrancing purposes. Our friends and we use it for the whole body, even for the hair or as shavingsoap.
